Dr. Perricone recommends that you have snacks at regular intervals through the day. This should include 2 ounces of cajun whole chicken or turkey, a couple of almonds or 6 oz. of plain yogurt. This hearty stew, which serves six people, is high in protein and low in carbohydrates. As I stated, it does work but it's much more complicated than it looked on TV. I've tried other recipes including mini meatloaves and they work but like the chicken, each one requires more steps than I consider convenient. And, I have never attempted to cook frozen food and have it done in the short time promised. The potential for food cooked on the outside but raw in the middle seemed too great so I've never tried. Meat topping choices include pepperoni, slow cooker whole chicken and veg, grilled chicken, beef, ham, bacon, Italian sausage, chorizo, and even spam. Other toppings include provolone, Swiss, cheddar, smoked gouda, gorgonzola , feta , pesto, pineapple, peanuts, walnuts, almonds, anchovies , and tofu. As if there were not enough choices already, you can even choose your dough and a sauce. I love chili, but the beans don't love me. When I eat them I have severe abdominal pain. So I leave out the beans and add other vegetables. The powder you buy in the grocery store is a combination of chili pepper, oregano, cumin, garlic, and salt. Sometimes I add extra cumin to this powder. First, heat the oil in a skillet, preferably cast iron, of course, over medium heat. Add onions and garlic and cook until onions are translucent. Scrape the mixture into the pot and add the chicken. Mix the other ingredients, then pour over the chicken. Cook on Low four to six hours, or on High for two to three hours. When the chicken is no longer pink, discard the bay leaf, add salt and pepper to taste, and serve. Put chicken on a bed of rice for a complete meal. There was no crying when I chopped the onions because I used dehydrated onions. I didn't have smelly hands from chopping garlic because I used powdered garlic. I added carrots for sweetness and coffee for an undercurrent of flavor. It was one of the best batches of chili I have ever made. I served it with corn muffins. You may serve it with muffins, too,or crackers. Kids will like this recipe because it isn't too hot. As for cooking time as directed by recipes - keep in mind that one hour on high in a crockpot is equal to about 2 hours on low. If your slow cooker recipe calls for a four-hour cook time on high, but you want to eat in eight hours, cook your dish on low.
